  • The quarter inch size dice is a perfect size for all types of sausages and snack sticks.
  • Place your hi-temp cheese in your refrigerator as soon as you receive it
  • High Temperature cheese allow you to put cheese in your meat products and the cheese
    will maintain is shape, and will not melt like ordinary cheese when cooking.
  • High Temperature cheese maintains its shape (1/4") and allows you to have
    chunks of cheese in your final product.
  • (When you receive your High Temperature Cheese, open the package and let it
    set 5 to 10 minutes at room temperature. This will allow the cheese to break apart
    back into the 1/4 inch cubes.)
  • This cheese is made specifically to withstand high smoking and cooking temperatures 
    without melting; keeping its original cubed shape after stuffing, smoking and cooking.

    • We ship Our High Temperature Cheese in an insulated bag with ice for freshness.

      Ingredients:  Pasteurized Processed Cheddar Cheese (Cheddar Cheese (Cultured Milk, Salt, Enzymes), Water, Cream, Sodium Phosphates, Salt, Vegetable Color, Enzymes), Powdered Cellulose (To Prevent Caking), Potassium Sorbate and Natamycin (Preservatives)

      2.5 lb. Bag.

        • The recommended ratio of High Temperature Cheese to Sausage Meat is 1 lb. of High Temperature Cheese for Every 10 lbs. of Meat. So each of our 2½ lb. Bags of High Temperature Cheese should be mixed with 25 lbs. of Sausage Meat

        • When you are ready to use your High Temperature Cheese, remove the bag from the refrigerator and open the package.

        • Then let it set 5 to 10 minutes at room temperature. This will allow the cheese to break apart back into the ¼" cubes.
        •  Add the 2½ Lbs. of High Temperature Cheese per 25 lbs. of meat after the last grind
        • (DO NOT grind the cheese through your grinder when preparing your sausage!)

        •  High Temperature Cheese will last up to 1 to 2 months in your refrigerator.  Store your High Temperature Cheese in your refrigerator - DO NOT FREEZE.

      My first time to use this cheese but it won't be my last.

      We used the high temperature cheddar cheese to make our own summer sausage and I was a tad dubious about what to expect. After smoking the sausage for a little over seven hours and thinking there was no WAY the cheese was going to stay solid, much less taste good, I couldn't believe my eyes to see that the sausage looked PERFECT, with little cubes of cheese evenly disbursed throughout the whole tube. Ok...that's one concern that was unwarranted.... but how is the cheese going to actually TASTE? Now I know why they can charge $10 a pound...this cheese tastes AWESOME and makes the sausage even better than the small portion we tasted prior to adding the cheese and stuffing the sausage skins. The Meatcutter shipped our order the same day I called them and the young lady on the phone was VERY helpful and encouraging when I told her I had never purchased anything like this before. We received the package in super short order and the cheese was still cool because it was packed in two layers of bubble wrap and had two freezer packets keeping the package cold and ready to be used. I'm now sold on the Meatcutter's products and I'll definitely be a return customer.

      Very pleased with the product. I find that 10% used in sausage is a good ratio.

      • Do you have overnight shipping for 5lbs of cheese to northern California

        No, I'm sorry but we do not offer overnight shipping on any of our products.

        This is mainly due to the fact that the overnight shipping would usually cost more than the product itself.

        The 5 lbs. of cheese would cost $39.97 with 2 to 3 day USPS Priority Mail shipping.

        With overnight shipping the cost would be approximately $84.00.
