Salt, Red Pepper, Sage, Sugar and Black Pepper. NO MSG!

8 oz. bags.  Each Bag correctly seasons 25 lbs. of meat.

    • Mix bag with 25-lbs. of meat. You can use 25 lbs. of lean pork (boneless pork shoulder butts will work if you can't purchase 80/20 pork trim from a butcher shop). Or you can use 22 lbs. of lean pork and 3 lbs. of lean beef.
    • Empty entire bag of seasoning into the 25 lbs. of meat and mix thoroughly (it works best if you cut the meat into small chunks first).
    • Stir till seasoning is well mixed with the meat.
    • Grind through normal grinder plate.  Normally 1/4inch grinder plate
    • Then stuff the sausage into Natural Hog Casings for links. 
    • Or you can package the sausage in 1 lb. bulk Freezer Bags.
    • Breakdown for less than a 25 lb. batch - 3 Tablespoons of seasoning per 5 lbs. of meat. Can be used when making deer breakfast sausage. Our recipe is to use 50% (12.5 lbs.)deer with 50% (12.5 lbs.)lean pork and use 1 - 8 oz. Bag of Legg's #10 Seasoning.

    I have to say I called and talk to the owner , I needed advice on a good breakfast sausage, I was told they were using this product for 35 years and that's what they use for themselves, As a repeat customer I trust them, So it wasn't surprised how My breakfast sausage tasted, I've been using ask the meat cutter for approximately 8 years never disappointed

    • Been using your #10 seasoning for a long time. Now you have a new bag and no longer list the ingredients. I have to know exactly what I am using because of food sensitivities. Why did you change your packaging? I hate having to give up using your seasonings. But if I can't know what's in it, I can no longer consume it. Sad.

      The manufacturere changed the package - we did not do that.

      Unfortunately we have no control over how AC Legg packages their seasonings.

      According to the AC Legg manufacturers website there has been no real change in the seasoning.

      They have changed the wording around. The old ingredient list on the package was:  Salt, Red Pepper, Sage, Sugar and Black Pepper.

      The new package ingredients are:  Salt, Spices, Sugar.

      So new ingredients have been added to the seasoning and the taste is still the same as before.

    • Is this gluten free sausage seasoning

      None of AC Legg Sausage Seasonings are labeled Gluten Free but the ingredients for the #10 seasoning is:  Salt, Spices and Sugar.  1 of the ingredients of the spices is Sage.  As far as I know salt, sage and sugar does not contain glueten.
